At nU Nooz we make bronze die extruded pastas the old way - slowly. By hand.
We are different than mass-produced pastas and you'll know it when you touch and savor our pasta.
In our pasta you will find local ingredients including Utah Hard Red Wheat, locally milled Durum Semolina, Redmond Real Salt, and produce from local farmers. While most of our pastas are vegan, a few have farm-fresh eggs from free-range heritage chickens.
Mass produced pastas are made using only Durum Semolina and shaped with plastic dies that leave a smooth surface which makes a slippery, watery pasta. Further, the mass-producers will then cook your pasta using humidity and high heat to dry it, which extends your home cooking times and creates pasta that will leave your sauce and cheese on your plate.
We use handmade bronze dies and a slow drying method which leave a classic rough surface on our pasta which holds sauce and make better tasting and eating experiences.
We are often asked, "Why nU Nooz?" Our oldest daughter has always had a love of noodles, but at the age of 2 she was unable to pronounce it, asking instead for "nu nooz" every night - thus the name of the company was born. Perhaps someday she'll become a pastamaker, too.
