Stuffed Pasta:

Our fresh stuffed pastas, both ravioli and agnolotti, should be placed in a shallow water bath, like a deep skillet.  Boil the water, gently place the stuffed pasta in the water and it will sink.  In 4 or 5 minutes the pasta will rise to the surface, indicating it is done.  (Sometimes it floats after just a minute or two, if this occurs please let the pasta continue cooking, turning it over in the boiling water for 4 or 5 minutes.  This early floating generally has to do with the filling we use and we've found that cheese-only fillings float almost instantly.)  We recommend scooping the pasta out with a large spoon or spatula to preserve its integrity.
Dried Pasta:

Start with more water than you would normally use.  Do salt the water.  Place the pasta into water that has already come to a boil.  Pasta that sits in water while it heats up will soak up too much water and may come apart.  Thin pastas including pappardelle, fettuccine, and tagliatelle will be done in 6 to 8 minutes.  Thicker pastas should cook from 8 - 10 minutes. 

When the pasta reaches the softness you'd like, drain the boiling water and do not rinse the pasta.  When you rinse pasta you are rinsing away the protein from our amazing wheats. (Yes, protein!  Pasta isn't just carbs!)  While the pasta is still warm add it to your sauce in a sautee pan and it will briefly continue cooking which allows it to soak up some of the delicious sauce.
Fresh Pasta:

  Place the pasta into water that is already boiling.  Fresh pastas have a greater tendency to come apart if they are left in the water too long.  All of our fresh pastas need to cook only 4 or 5 minutes.
 
Please keep in mind that fresh pastas have 5 days after they are bought that they must be eaten or frozen.  Life does occasionally get in the way of dinner plans, so if you must wait to eat your fresh pasta you can freeze it just as it is packaged.  When you do have time to eat your pasta, please unthaw it in the fridge instead of on the counter

(Fresh teeny rotini will dry beautifully if you spread it out on a baking sheet and let it sit at room temperature for 4 - 5 hours.)
